Make a Simple Salad (Individual)

In this month's challenge, you will be putting together a salad made exclusively from veggies you have harvested yourself.

To complete this challenge, all three ingredients in your meal must have been planted and harvested by you.

Getting Started

A simple salad can have as few as 2 or 3 ingredients. Usually they entail a "base" and at least one or two accent veggies. Follow the suggestions below to build your own salad.


Salad Base

The salad base takes up the most volume of your dish and it is usually a leafy green.

  • Lettuce, spinach, kale

  • Microgreens: bean sprouts, cilantro sprouts

  • Cabbage

Ingredient One - Contrast:

Add one ingredient that contrasts with salad base in flavour and colour.

  • Berries such as: strawberry, blueberry, blackberry or tomatoes/cherry tomatoes.

  • Colourful veggies like: carrot, beet, peppers (red, yellow)

  • Veggies with the same colour as the base (green) but with different textures and flavours than the leafy greens: cucumbers, broccoli, cauliflower, peppers (green).

Ingredient Two - Accent:

Add a second ingredient that compliments or accents the base and first ingredient.

  • Add bite & zest with: onion (white, yellow, red), green onion

  • Add texture and flavour with: peanuts, walnuts, almonds, peas

I kept my salad simple today, as we are just starting to harvest our cucumbers and tomatoes!


Ingredients:

Cucumber half a medium sized one

Tomato one full tomato

Balsamic vinegar 1 tbsp

Olive Oil 1/2 tbsp

Salt & Pepper season as preferred


Description:

I've always loved the simplicity of a tomato and cucumber salad. It doesn't take much to contrast the crunchy cucumber with the soft tomatoes. I kept the dressing simple today, using just a bit of balsamic and olive oil, but this simple salad can be dressed in so many different ways! Looking forward to seeing others salads!

I like to make salads with plants foraged from around my cottage.


For a base, dandelion greens are great. Younger, smaller leaves taste best. Good tip: get ones that grow in shade. They grow more slowly and taste better. Bigger greens are more bitter.


Dandelion flowers are good too. Get the big and bright ones (before they go to seed obv!).


I like mushrooms in my salads too. I cook them before adding to salads. Oyster mushrooms are the best of course! Porcini is also quite tasty.


Berries do make a good contrast. I like raspberries or strawberries. Blueberries are good on salads too.


Rhubarb makes for a good contrast too IMO. Wild rhubarb can be sweeter than cultivated, but…

Delicious with a dash of ecological cold pressed olive oil and apple or apple cider ( from your own apples)
